You hear much talk these days of ultra-hip boutique hotels springing up around the West Indies, which is all well and good, but nothing really beats staying in the kind of hotel that makes you realise why everyone loves the Caribbean, and why you fell in love with it in the first place. Windjammer is one of St Lucia's leading resort hotels, forever winning prizes for its accommodation, food and beaches (it possesses Bride magazine's "Most Romantic Beach", and the hotel also specialises in second marriage celebrations, if you're interested). The resort lies on Labrelotte Bay in the north-west of the island and was completed 20 years ago, so there are lots of good anniversary deals currently being marketed.
As we peered into the vats of fermenting sugar-cane molasses used for the rum, I suddenly thought it would be brilliant to make that old-fashioned dessert-trolley classic, rum baba, using the natural rum ferment instead of yeast. But getting the natural rum ferment out of the country proved a bit tricky as you can imagine, so I ended up using my sourdough-bread starter mixed with molasses which gave the babas a nice dark rich colour. At home you may not have either, so I've given you the dried yeast option here.

Government's moneymadeclear service offers financial advice for free
A free financial advice service has been launched by the Government. Called Moneymadeclear, it offers a telephone helpline, website and face-to-face sessions with independent financial experts. The service will cost around £20m in the first year and is being jointly funded by the Government and the Financial Services Authority. In future years it will be paid for by taking up to £100m from dormant bank accounts, as announced in last year's pre-Budget report.
